
Blanco Niño use the ancient Aztec cooking method known as nixtamalisation to produce award-winning, slow-cooked corn tortilla chips. Each batch takes three days to make, producing a truly authentic texture and flavour.
In tribute to the communities and traditions that inspire Blanco Niño, they married together blue corn and amaranth to create a sweet, earthy flavour. Amaranth was a vital crop, not just for food, but in the spiritual and ritual life of Mesoamerican indigenous civilizations. The Amaranth is sourced from farmers in Milpa Alta, which overlooks Mexico City.
