Raspberry & Choc Chip Muffins

Weekend muffins anyone? 🥰 if you’re in the mood for baking, we have just the thing - vanilla protein muffins with raspberries and chocolate chips 😋 YUM!

🕒 Total time: 50 min
⏲️ Bake time: 25-30 min
🍴 Serves: 12 muffins

🧁 Ingredients:
250 gr plain flour
50 gr @tarwifoods Vanilla Protein Powder
200 gr ground almonds
2 tsp baking powder
1 tsp bicarbonate of soda
250 ml milk of your choice
200 ml maple syrup
4 tbsp melted butter or coconut oil
100 gr frozen raspberries
100 gr dark chocolate chips

🥣 Method:
1. Preheat the oven to 180 C, fan setting. Line a 12 hole muffin tray with muffin cases.
2. Place the dry ingredients: flour, ground almonds, vanilla protein, baking powder and bicarbonate powder into a large bowl and mix well until there are no lumps.
3. Pour in the milk, maple syrup and melted butter. Mix well until a thick batter forms.
4. Once thick and smooth, stir through the raspberries and chocolate chips.
5. Divide the mixture equally between the muffin cases and bake for 25-30 minutes until golden, risen and cooked through.
6. Once cooked, remove from the oven and leave to cool to room temperature.
