Sauce ingredients:
2-3 c. of Lummus Original soup
qb water
Ingredients for the bowl:
1/2 butternut squash, cut into small cubes.
1 head of broccoli, cut into small florets
1/2 zucchini, cut into half-moons
1 small onion, cut into half-moons
Olive oil as needed
Salt and black pepper
Dried thyme (optional)
2 to 3 tablespoons of cooked quinoa
🥣 Preparation:
1. Preheat the oven to 180°C.
2. Cook the quinoa according to the package instructions and set aside.
3. In a baking dish, add the pumpkin, broccoli, zucchini, and onion. Drizzle with olive oil, season with salt, pepper, and a little thyme (if desired). Mix everything well.
4. Bake for 20 to 25 minutes, stirring halfway through, until the vegetables are golden brown and tender.
5. For the sauce, mix 2 to 3 tablespoons of Lummus Original with a little water until it reaches the desired consistency.
6. Assemble your bowl: start with the quinoa, add the roasted vegetables, and finish with the Lummus sauce on top.
7. If desired, add seeds, fresh herbs, or an extra drizzle of olive oil.
