Ingredients:
1/4 zucchini, grated
1/2 small carrot, grated
2 tbsp of hydrated tapioca
1 tbsp Essential+ Vegan Protein, Neutral Flavor
2 eggs
salt and black pepper
2 tbsp Basil Lummus
🥣 Preparation:
1. Start by grating the zucchini and carrot. Set aside.
2. In a bowl, add the eggs, tapioca, and protein. Mix well with a fork until you have a smooth mixture.
3. Add the grated zucchini and carrot, season with salt and black pepper, and mix again.
4. Heat a non-stick frying pan over medium heat and, if necessary, add a drizzle of olive oil.
5. Pour the mixture into the frying pan and spread it evenly to form a thin layer.
