Pumpkin & Basil Soup

Soup ingredients:
- 1 butternut squash, diced
 - 1 medium onion
 - 2 medium carrots
 - 1/2 courgette, peeled and diced 
 - olive oil to taste
 - water to taste (until the ingredients are covered)
 - sea salt
 - black pepper, optional
 - small sprig of fresh basil 
 - 1 cm fresh ginger 
 - 4 tablespoons of Tarwi Protein: Unflavoured
 
Ingredients for Basil Lummus Sauce:
- 2 tablespoons of Basil Lummus
 - water as needed
 
🥣 Preparation:
1. Start by cutting the vegetables and setting them aside.
2. Heat a drizzle of olive oil in a saucepan, add the vegetables and brown them slightly.
3. Add water until the vegetables are covered, season with salt and black pepper and cook until the vegetables are tender.
4. Blend everything with a hand blender until creamy. Add the sprig of fresh basil and the unflavoured protein. Blend again and add more water if necessary to adjust the texture of the soup. 
5. Adjust the seasoning if necessary.
6. For the sauce, mix the basil Lummus with a little water until you achieve the desired consistency.
7. Serve the soup with a drizzle of basil Lummus sauce.
8. Enjoy!
